I must admit I was pretty happy when I made this pastry! I have attempted a few different Gluten Free pastries in the past but found that they have either been too crumbly or too dry. I really love the taste of buckwheat and find that it goes perfectly with these winter vegetables...
If you wanted to make the pastry sweet you would just eliminate the sea salt, add a drop of vanilla and a tablespoon of honey or coconut sugar.
