Nothing beats a freshly baked warm chocolate muffin straight out of the oven... turning baked treats into whole food eats can be tricky at times (especially when it comes to getting the kiddies tick of approval!).
These muffins are super easy, and so delicious!
Makes 6 Large or 10 Small Muffins
1 cup buckwheat flour
1 cup almond meal
2 tsp GF baking powder
1/2 cup coconut sugar
3 heaped tbsp raw cacao powder
1/2 tsp sea salt
3 large bananas, mashed
1/2 cup rice bran or olive oil
3 egg yolks, 5 egg whites, separated
1/4 cup raw cacao nibs
Fresh strawberries or date & cashew 'salted caramel' to top
